5 Super Simple Healthy Snacks

Lately I've been trying to get back into my healthy diet but eating healthy can be a real chore sometimes, it's so easy to just order pizza or snack on a biscuit when you're hungry so I've come up with just a few of my favourite healthy snacks which are simple to make, super healthy and absolutely delicious.

Smoked Salmon Salad Wraps
I first had these in a Vietnamese restaurant in Thailand and they tasted so nice I had to recreate them all you need is a pack of smoked salmon and some shredded carrots and salad leaves, wrap the salmon around a few of the salad leaves, season with a bit of salt, pepper and lemon and you have an instant delicious healthy snack!

Mango Salsa
Salsa is awesome with everything and a simple one to make to just chop up a few tomatoes and some mango, add in some coriander and season with salt, chilli and lime. Salsa is fresh and easy you can have it as a side dish or even eat it on its own and the mango adds a nice juicy sweetness to the mix.

Cucumber Som Tam
Another revelation from Thailand which I've pretty much been eating weekly these past few months! Just slice up some cucumber and tomatoes, smash in some chilli and garlic, squeeze in some lime juice, add soy sauce, fish sauce and palm sugar (or brown sugar) if you need a little sweetness and you have an instant taste of Thailand.

Beetroot Chips
A simple snack which should curb your crisp cravings, just thinly slice up some beetroot, season with some salt and pepper, throw in a bit of rosemary, drizzle with olive oil and then bake in the oven for 10 - 15 minutes until crisp, yum!

Peach Donuts
Perfect to curb any sweet craving you'll have just peel and core your peaches, sprinkle with a touch of cinnamon, drizzle with honey and bake for 10- 15 minutes, when the peaches have softened a little sprinkle on a few crasins and serve, they're just as good as the real thing!

Fruity Tea
This is a little bonus just incase you needed something fresh to water down all those healthy snacks. I've been obsessed with fruit teas lately all you need to do is brew your favourite tea then chop up any fruit you may have, put it in a bottle, pour in your tea and chill overnight then in the morning you'll have a gorgeous, fresh, fruit infused tea to drink throughout the day.

EXTERMINATE!!!

Snugburys not only has amazing ice cream but amazing hay sculptures, every year they build something awesome last year it was a polar bear and this year in honour of the 50th anniversary of Doctor Who they built a Darlek!

I totally took this as an excuse to dress up and quickly made myself an "Oswin Belt" complete with whisk, and when I say quickly I mean a few hours but if I ever cosplay as Oswin again I will definitely make myself a better belt because this one pretty much fell apart after I wore it

Snugburys went all out with their sculpture this year because this thing lit up, moved and talked; not only that but they had special "Da-lick" cones you could buy which featured a delicious Dalek printed wafer, as you could tell I was super excited, geeky stuff and ice cream is a heavenly combination for me.

Of course after I quickly "exterminated" my ice cream which was bloody lovely by the way, I couldn't resist buying a few more tubs to bring home with me and the great thing is they have a low fat version to so I don't have to feel too guilty about eating a whole tub, although I do wish they would make some Jammie Dodger ice cream!

SDCC: Seeing Supernatural at Nerd HQ

My magical run of Comic Con good luck ran through right until the end when I managed to score a ticket to the Supernatural Nerd HQ panel, in past years only Jared had done them but this year Jensen came to. Getting tickets was kinda a nightmare as soon as they went on sale they were listed as sold out but after a refresh of the page I somehow managed to score one ticket,  I then spent the next hour refreshing the page trying to get tickets for Violet and Steph but alas no luck, there were most definitely sold out so I was going alone....

I've watched this show since the beginning and as much as I love Supernatural I didn't fancy camping out for Hall H and competing with the Doctor Who and Breaking Bad fans for seats, and I was pretty sure the signing tickets would disappear really fast in the morning so I was determined to get these Nerd HQ tickets so I would at least get to see them in person while I was there.

I had also made Jared, Jensen and Misha (well technically their kids) some special "Hellhound" scarves to give them, Steph and Violet managed to meet Misha on Saturday for some random crazy Gishwishes contest thing and gave his to him then but my lame slightly intoxicated attempts to get Jared and Jensen to notice me at Nerd HQ failed so no Hellhounds for them :(

Did I mention I was slightly tipsy by the time the panel started.... yeah, I had a margarita at lunch with Yume then got to Nerd HQ early to avoid the crowds of Hiddlestoners that were gonna be there so had a few beers while I waited which will probably explain why you can see me shamelessly squealing on the front row, my inner fangirl will forever be on the internet... oh dear!

Who cares though right? I had a great time and I finally got to see my Winchester boys YEY! I won't bother telling you about the panel because you can see it in it's full glory for yourself and witness the amazing tale of why they were late, Jensen's Russian accent, Jared eating a whole pack of gummy bears and let's not forget the adorable Zac Levi who not only organised the whole shebang but raised a lot of money for charity in the process.

It was just the perfect ending to a perfect Comic Con, I was so happy yet so exhausted by the end of it all but I had the best time ever and I want to go again so badly if only just to hang out with my geek girls so bring on the next Comic Con!
