Tofu terriyaki stir-fry is my new obsession! I've pretty much been living on the stuff for the past month and not only is it super yummy it's also super healthy, super easy to make and suitable for my vegan friends to munch on to and if you want to be extra healthy why not make yourself a bowl of steamy brown rice to eat it with.
Ingredients
- Tofu
- Portabello Mushroom
- Mange Tout
- Kale
- Chinese Leaf Lettuce
- Garlic
- Terriyaki Sauce
- Carotino Oil (or whichever oil you prefer cooking with)
♥ Add a tablespoon of oil to a wok and place it on a high heat.
♥ Slice the garlic, tofu, Chinese leaf, mushroom and kale into your desired size, I like to keep them chunky so they stay crisp when cooked.
♥ Place the garlic and tofu into the heated wok and cook until they are slightly browned and crisp.
♥ Add the rest of the vegetables to the wok and cook then for a few minutes until they are softened.
♥ Add a tablespoon of the terriyaki sauce, toss, then take of the heat and serve.
♥ Eat it alone or with rice or noodles.
