Vegan & Gluten-free Pumpkin Scones 🎃


One of my proudest achievements this year has been growing my own vegetables especially this pumpkin so I wanted to put it to good use and make something special so decided to try baking some pumpkin scones as pumpkin scones are one of my favourite seasonal snacks from Starbucks.


It has been a while since I made scones and because I wanted to make it suitable for all diets to enjoy it took me a few attempts to get this recipe right but the end result is vegan, gluten-free, oil-free, and in my opinion even better and more delicious and healthy than the ones I used to get at Starbucks.


For this recipe I steamed and mashed the pumpkin to make my own pumpkin puree but you can use pumpkin puree from a can to save time, also be sure to put your can of coconut milk in the fridge overnight as it will make the dough easier to work with and create a better crumb.

Ingredients

Dry
  • 1 cup gluten-free flour mix
  • 1 tbsp coconut flour
  • 1 tbsp ground flax seeds
  • 1 tsp baking powder

Wet
  • 1 cup pumpkin puree
  • 1/3 cup sugar
  • 1/3 cup chilled coconut milk
  • 2 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp apple cider vinegar

Step 1 - Mix the dry ingredients
In a large bowl measure out and mix all the dry ingredients together until combined.

Step 2 - Mix the wet ingredients
In a separate bowl measure out and mix all the wet ingredients together until well combined.

Step 3 - Mix all together
Gradually add in the wet ingredients into the dry until a soft sticky dough has formed.

Step 4 - Chill
Put the dough in the fridge to rest for an hour.

Step 5 - Heat the oven
While the dough is resting preheat an oven to 200°C and line and grease a baking tray with parchment paper.

Step 6 - Shape the dough
On a clean flat surface sprinkle some flour and then press the dough out in a circle until it's an even 2 - 3cm thick, cut the dough into half, quarters and then eight pieces then place each piece on the lined baking tray.

Step 7 - Bake
Place the scones in the oven to bake for 15 - 20 minutes until golden brown and the tips begin to crisp.

Step 8 - Cool
Once cooked remove the scones from the oven and allow to cool before eating

Step 9 - Eat & Enjoy!
You can eat these scones alone or served with a delicious hot cup of coffee or tea.

Vegan Eggless Egg Sandwich 🥪


The colder mornings here in the mountains of Northern Thailand have got me craving some hearty warm breakfasts. Lately I've been seeing a lot of delicious looking egg sandwiches on my Instagram feed so I decided to try and create my own breakfast eggless egg sandwich using some homemade tofu from my local market.


The main ingredient of this sandwich is the tofu scramble which is really easy and simple to make and fully customisable to you tastes so feel free to add in your own herbs and spices and extra veggies. I added some vegan mayonnaise and avocado to my sandwich which gave the scramble an extra creaminess but feel free to use your own sauces like ketchup, BBQ or Sriracha sauce for an extra kick.

 
You can use whatever bread you want for this recipe, I just toasted some regular sandwich bread I had left but this works great with sourdough, in a baguette, bagel or even a croissant, it makes a really great breakfast, hearty but not heavy, perfect to give you an energy and a mood boost on cold day.

Ingredients
  • 100g firm tofu
  • 1 tbsp nutritional yeast
  • 1 tbsp soy milk
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • 3 small cloves of garlic
  • 2 medium sized tomatoes
  • A handful of button mushrooms
  • Cilantro to garnish

Step 1 - Prepare the tofu
Crumble the tofu into a bowl and mix in the nutritional yeast, soy milk, smoked paprika and salt and pepper.

Step 2  - Prepare the vegetables
Dice the garlic and tomatoes and slice the mushrooms into small pieces, chop the cilantro and leave to one side for garnish

Step 3 - Cook
Heat the olive oil in a frying pan on a medium high heat and add the garlic, once that garlic is slightly crispy add in the tomatoes, mushroom and tofu crumble mix, you don't need to cook it for too long, just until the vegetables are softened and the tofu is warmed through. Once cooked sprinkle on the cilantro and it's ready to go.

Step 4 - Sandwich time!!
There should be enough of the tofu scramble for 2 - 3 sandwiches depending on how big you want to make them OR you can just serve the tofu scramble on its own as is.

Vegan & Gluten-free Soda Bread 🍞


The perfect compliment to my vegan cream cheese recipe is this vegan and gluten-free soda bread. During lockdown when I was unable to go to a bakery I used to make soda bread all the time as the ingredients are so simple, easily available and it's really quick to make unlike regular bread which requires yeast and a lot of kneading and time proving, this bread however can be done in less than 30 minutes!

Soda bread has a much denser texture compared to regular bread and making a gluten-free version I expected to be challenging but whilst still being being dense compared to regular yeasted bread I found this version to be softer and lighter than my regular soda bread and I actually prefer it much more so this is the recipe I decided to share.


Most of the bread widely available in Thailand contains milk and has a sweet taste which I'm not a fan of so this is a nice easy, quick alternative for me to make at home and to level it up you can also add in some herbs and spices, I often chop up some rosemary from my garden and throw it into the mix which gives it a great fragrance and taste.

Ingredients
  • 3/4 cup Rice flour
  • 1/4 cup Coconut flour
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 cup Oat milk
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Ground flax seed
  • 3 tbsp Water

Step 1 - Preheat an oven to 220°C
Prepare a small baking tin by greasing it with a little oil and line the bottom with some baking paper.

Step 2 - Make the buttermilk
Mix together the oat milk and apple cider vinegar in measuring jug and leave to curdle for 5 - 10 minutes.

Step 3 - Make a flax egg
To make a flax egg mix together the ground flax seeds and water in a small dish or glass and leave to stand for a few minutes so the mixture gets thicker and more gel like in consistency.

Step 4 - Mix together the dry ingredients 
In a mixing bowl mix together the rice flour, coconut flour, baking soda and baking powder.

Step 5 - Add in the wet ingredients
To the flour add in the flax egg and buttermilk mixtures and mix until well combined, the mixture should come together and look like a wet dough.

Step 6 - Shape the Loaf
Shape the dough into a round ball which is about 1" - 1.5" thick and place into a baking tin and score the top with a cross about half and inch deep.

Step 7 - Bake in a oven
Place the bread into the center of a pre-heated oven and bake for 15 - 20 minutes until the top has a golden brown crust.

Step 8 - Let it cool
Once cooked take the soda bread out of the oven and let it cool for 10 - 20 minutes then remove it from the tin and let it cool for a little while longer before slicing and serving. Leaving it to cool will help the structure so when you cut into it it won't be too crumbly.

Step 9 - Serve and store
You can serve the soda bread sliced or toasted in the oven for a few minutes with some cream cheese, it also goes great with soups and stews. The bread will last around 3 - 5 days in an airtight box which you can leave on the counter or if you live in a warmer climate like me then you can keep it the fridge.

Super Easy Vegan Cream Cheese 🧀

 

Christmas is coming and there's nothing like a cheese board to get you in the mood for the season however if like me your stomach suffers when overloaded with dairy and you don't want to spend all day running to the toilet this dairy-free vegan cream cheese alternative is quick and easy to make and tastes just as good, if not better than the real thing.


Consider this recipe is a base with which you can add all sorts of flavours to. I love adding some smoked paprika into the mix and have also tried it with roasted garlic and rosemary. So feel free to add in some of your own herbs and spices and even some dried cranberries, a dash of brandy and some orange zest for a more festive flavour. 


The best thing about this is that it's super simple and really quick to make you just need a blender and that's it! I always thought vegan cheeses were difficult to make but this is a really easy substitute for when you have those cheese cravings and the ingredients are really simple and easily available. I honestly prefer this over a lot of the cream cheeses I used to eat and as a bonus it's much healthier for your than the regular dairy cream cheese.

Ingredients
  • 170g Firm tofu
  • 4 Tbsp Nutritional yeast
  • 1 Tbsp Olive oil
  • 2 Tbsp Apple Cider Vinegar
  • 1 Tsp Miso paste
  • 2 Tbsp unsweetened soy milk (if you want a thicker cheese you can omit this)
  • Salt & Pepper to your taste

Step 1 - Blend
In a blender add all of the ingredients and blend until smooth. I recommend that you also give it a taste at this point and if you need to you can adjust the taste to your liking.

Step 2 - Chill
Scrape the mixture out of the blender and put it in a airtight box to chill for a couple hours in the fridge. You can serve straight from the blender but I think the texture and taste is much better after it's chilled for a little while.

Step 3 - Serve
Once the cream cheese has chilled it's ready to eat so just spread it on some toast and enjoy and it should last 3 - 5 days in an airtight box in the fridge depending on how fresh your tofu is.

Vegan & Gluten-free Welsh Bara Brith 🎄


Bara Brith always reminds me of Christmas. It was one of the first things I learned how to bake and every Christmas my auntie would gift us a loaf along with her homegrown, homemade apple chutney. This year I wanted to bring a little bit of that Welsh Christmas spirit into my new house in Chiang Mai and create a version that was both vegan and gluten-free so everyone could enjoy it.


If you've never had Bara Brith before it's similar to a fruit loaf but what makes it special is that the fruit is soaked in tea giving the loaf a nice tea flavour. It's the perfect Christmas cake alternative if you don't like a heavy dense fruit cake or strong spices and it goes nicely with a warm cider or hot eggnog.


As the main ingredients of Bara Brith are eggs and flour it was a bit of a challenge to make this both vegan and gluten-free and get the texture right but after a few failed attempts I'm finally happy enough with the results to share my recipe in time for Christmas.


Ingredients
  • 100g Dried mixed fruit
  • 70g Brown sugar
  • 100ml Hot water
  • 1 Tea bag (Yorkshire Tea is my favourite but any breakfast or black tea will work)
  • 100g Gluten-free flour mix
  • 30g Riceberry flour 
  • 70g Unsweetened applesauce
  • 1/2 tbsp Ground flax seeds
  • 1 tsp Baking Powder
  • 1/4 tsp Cinnamon powder

Step 1 - Soak the fruit
The first thing to do is make a very strong tea brew, I usually let the tea bag soak in boiling water for about 5 minutes and then give the tea bag a good squeeze to get all the flavour out. After the tea is brewed add 100ml of the hot tea into the dried mixed fruit and brown sugar, give it a stir to help the sugar dissolve, and leave it to soak overnight. 

Step 2 - Preheat an oven to 180°C
Prepare a 6" loaf tin by greasing it with a little oil and line the bottom with some baking paper.

Step 3 - Mix the dry ingredients
In a mixing bowl mix together the flours, ground flax seed, baking powder and cinnamon

Step 4 - Add the wet ingredients
To the dry ingredients add in the tea soaked fruit and mixed until combined. There's no need to drain the fruit just add in the whole tea, fruit, sugar mix.

Step 5 - Mix in the applesauce
Lastly fold the applesauce into the mixture until well combined.

Step 6 - Pour batter into a loaf tin
Evenly distribute the batter in the tin and then drop the tin on the kitchen counter a couple of times to make any air bubbles rise to the surface and ensure you don't get any holes in your loaf.

Step 7 - Bake in a oven
Place the loaf tin into the center of a pre-heated oven and bake for 20 - 30 minutes or until a toothpick comes out clean. If the top of the loaf is starting to look like it's burning but the loaf isn't completely cooked through yet you can cover it with tin foil on top to prevent the top from burning.

Step 8 - Let it cool
Once cooked take the Bara Brith out of the oven and let it cool for 10 - 20 minutes then remove it from the tin and let it cool for a little while longer before slicing and serving. Leaving it to cool will help the structure so when you cut into it it won't be too crumbly.

Step 9 - Serve and store
You can serve the Bara Brith sliced plain or with a bit of butter or honey and if you need to store it, it will last around 7 days in an airtight box which you can leave on the counter or if you live in a warmer climate like me then it's better to keep it the fridge.

🍫 Chocolate Banana Cupcakes 🍌 (VEGAN) 🌱


My baby cousin LOVES chocolate so I thought I would create a cupcake recipe just for her but try to make it a little bit healthier as it's not good to feed a 4 year old too much chocolate! For this recipe I tried out a couple new vegan products, the Nature's Charm chocolate syrup made by one of my absolute favourite vegan cafes in Bangkok and some new plant-based milks that were on offer at the supermarket, but if you can't find these brands don't worry you can just use any chocolate syrup and milk or instead of the syrup just use cacao powder instead for a less sweet version.

Ingredients
  • 1 cup mashed banana
  • 1/3 cup chocolate syrup
  • 1/3 cup melted coconut oil 
  • 1/2 cup chocolate milk 
  • 1/4 cup coconut sugar or brown sugar (optional)
  • 1 tsp baking powder
  • 1 + 1/3 cup of all purpose flour
(Makes 10)

♥ Preheat and oven to 180 & line a cupcake tray with 10 cupcake cases

♥ In large bow mix together the mashed banana, chocolate syrup, chocolate milk, coconut oil and sugar, if you don't want the cupcakes to be too sweet then you can leave out the sugar.

♥ Sift in the flour and baking powder and mix it into a smooth batter.

♥ Divide the batter equally into the cupcake cases and bake in the oven for 15 - 20 minutes.

♥ Once baked removed the cupcakes from the oven and allow them to cool on a wire rack.

♥ Eat and enjoy!

🥜 Peanut Butter Banana Cupcakes 🍌 (VEGAN) 🌱


Since moving to Thailand 5 years ago I have hardly cooked let alone baked, however we have quite a few banana trees at our home in Bangkok which has blessed us with more bananas than we can comfortably eat so I decided it was finally time to get baking again and join the rest of the world and perfect my banana bread recipe. I've been experimenting with all sorts of different banana themed recipes over the past month and using my family as taste testers so decided to share a few of my most successful recipes for you to try to make yourselves.

Ingredients
  • 1 cup mashed banana
  • 1/2 cup peanut butter 
  • 1/2 cup almond milk 
  • 1/2 cup coconut sugar or brown sugar
  • 1tsp baking powder
  • 1 cup of all purpose flour
(Makes 10)

♥ Preheat and oven to 180 & line a cupcake tray with 10 cupcake cases

♥ In large bow mix together the banana, peanut butter, almond milk and sugar

♥ Sift in the flour and baking powder and mix it into a smooth batter.

♥ Divide the batter equally into the cupcake cases and bake in the oven for 15 - 20 minutes.

♥ Once baked removed the cupcakes from the oven and allow them to cool on a wire rack.

♥ Eat and enjoy with your favourite cup of tea

🧼 Bangkok Soap Opera 🛀 Natural, Handmade, Eco-Friendly Soap & Skincare ♻️

I have walked past the beautifully smelling Bangkok Soap Opera so many times but sadly never been inside however I happened to notice one day while scrolling through Instagram that they were having a sale so I decided as I was down to my last sliver of soap it was the perfect opportunity to order some of their delicious looking soaps to try out and as it arrived to me so fast and so beautifully wrapped with sustainable packaging and smelt so wonderful I just had to share this amazing find with all of you because who doesn't love pretty soaps that smell amazing?


The most appealing thing to me about Bangkok Soap Opera is not just their amazing soaps but the fact that they do some amazing work in the community. Not only do they teach soap making skills and host workshops on natural skincare and candle making, which I definitely want to take part in one day, they also have a project where they take the used oil from local street stalls and restaurants and which would otherwise go to waste and use that oil to make into soap and then donate that soap to communities and charities in need, so by buying their soaps and supporting them you are also supporting a great cause and a more eco-friendly, sustainable future. 


As someone with quite sensitive skin I'm always cautious about what I put onto my skin and try to source as natural, organic and vegan as possible. Bangkok Soap Opera prides themselves on their natural ingredients and state they don't use any ingredients in their soap you can't eat as only if it's safe for you to consume it's safe for it to be used on your skin. Using only these natural ingredients they have produced a wonderful and wide selection of soaps in many "flavours" to suit all skincare types, I purchased 5 of their many soaps on offer, strawberry and rose, mangosteen and lemongrass, coffee and orange, chocolate pumpkin and cinnamon, lemon and tamarind, and they all smell amazing! So far I have only used the strawberry rose and it's wonderful, not only does my bathroom smell like an amazing rose garden every time I walk in but I've had complements about my "new perfume" and my skin feels so soft, beautiful and cleansed I really can't wait to get back into the shower to use it again.


I think as consumers we should all be making more of an effort to support businesses and brands that make a difference, personally I want the little money I have to go to the right places and businesses that align with my own ideals and beliefs and Bangkok Soap Opera is definitely a business I'm proud to support, not only are their products handmade with completely natural ingredients of the highest quality, they smell amazing, leave my skin feeling beautiful and are very reasonably priced to so worth every single penny and more, they ship worldwide to so please do go check them out and maybe treat yourself to some natural handmade skincare made with love.

🌱 Bangkok's BEST Vegan Plant-based Restaurants 🌱


I've been eating really well these days with all the amazing plant-based vegan choices available in Thailand, the vegan movement is getting so popular here that this month Bangkok's first vegan supermarket opened in Iconsiam one of the biggest malls not just Thailand but the whole of Asia so I will definitely be visiting it soon but in the meantime here are a few more of my favourite vegan restaurants in Bangkok I've been eating at recently.



Broccoli Revolution is one of the vegan restaurants I visit quite often as they have a few different branches around Bangkok, their food is always fresh and colourful and I love that they put an emphasis on using more local fresh fruits and vegetable. My absolute favourite is their veggie burger which comes in a charcoal bun and is made of lots of veggies and served with salsa and guacamole, it's so delicious and light yet filling to and it comes with their homemade fries which are just as delicious, I'm not the biggest fan of mock meats and prefer my plant-based food to be more fruits and vegetable based and Broccoli Revolution does just that with a menu full of fresh fruits and vegetables from pizzas and burgers to sushi and salad bowls , I definitely recommend you check them out!




Speaking of restaurants who use more vegetables instead of mock meats there's Nature's Charm. Their restaurant is one of the cutest in Bangkok with a pink and floral aesthetic and they make the best desserts, you wouldn't even be able to tell that their macarons are completely vegan as they taste even better than the ones from Ladurée and their "meat" is made completely from fruits and veggies, the chicken bites and fish is made from jackfruit but strangely looks just like actual meat and I was so confused when I first cut into their fish and chips I was so confused as it looked like actual fish but thankfully it wasn't and they did a phenomenal job as it tastes so good everyone needs to try their fish and chips!



This is a recently opened vegan café in one of my favourite spots in Emquartier. I've been buying The Banana Warrior's delicious healthy vegan banana bread for a while from farmers markets and cafes so was extremely excited to try her savoury food and it did not disappoint. The café is full of good vibes and I loved the little handwritten notes and I love that the menu constantly changes depending on what's available to as they source their ingredients from local organic farmers so I would recommend you go often and try whatever you can, as for the banana bread I've tried so many but the orange-gasm is my absolute favourite along with the lemon cookies that my grandma really loved, they are a must along with a cup of coffee or hot chocolate.

🌱 Bangkok's BEST Vegan Plant-based Restaurants 🌱

Thailand is an amazing place for vegan plant-based food with so many options available ranging anywhere from Michelin star gourmet tasting menus to $1 street food. Over the past few years since moving back to Bangkok I have seen the vegan plant-based community grow so much with new innovative vegan restaurants opening every few weeks so I thought it was time I shared some of the amazing places I've visited with you and show you that plant based live is not as bland as you think!

Nourish Cafe is my personal favourite vegan restaurant in Bangkok! They have a large menu full of Thai and international dishes at very reasonable prices and every weekend they have chef specials and delicious sandwiches to. Their desserts are also AMAZING their vegan Snykerz is one of the best things I've ever tasted and it's only $1!! But my personal favourite dish is the smothered burrito which is a MUST try if you visit, not only is it HUGE but I kid you not it's not just the best vegan burrito I've had, but best burrito I've tasted EVER! Aside from the awesome food the hospitality there is amazing to, they are the sweetest, kindest people and my heart always feels as full as my stomach after visiting. Nourish Cafe is just a short walk from On Nut BTS station and definitely worth the visit whether your craving Thai food, Mexican or anything really, I highly recommend them!!

Golden State Vegan Cafe is a new vegan restaurant in Bangkok which differs from the rest in that it specialises in vegan seafood. I'm actually very allergic to shellfish and even eating the vegan versions makes me sweat a bit even though I know there's no danger in eating them so trying this restaurant was an experience for me but I can honestly say they do the best seafood I have ever tried, it's not rubbery or spongy like some I've tried but very soft, delicious and melts in your mouth, you really need to try it to believe it! The cafe is also very aesthetically pleasing with some amazing original art pieces on the walls and beautiful tableware, it's exactly how I want my future house to look. As for what to try, I recommend everything, the poke bowls are extremely fresh, the lobster rolls just melt in you mouth, the fish burgers are HUGE and the crab cakes divine and you can also buy their self made frozen seafood and freshly made sauces to bring home and cook for yourself so be sure to check them out. 

Vistro was voted as Thailand's best plant-based restaurant in the Root The Future plant-based awards last year and they really do deserve it! I would describe Vistro and Vizza (their vegan pizzeria) as vegan food for non-vegans as their dishes are so creative and fake meats and cheeses so good they are virtually indistinguishable from their animal derived counterparts. Vistro has such a diverse creative menu that there's something for all tastes, they also recently did a special Diwali and Christmas menu which looked absolutely to die for and I can honestly say everything I've tried there has been so amazing that I can not pick a favourite. I would also suggest you follow them on Instagram as they regularly have special events and offers, the last time I visited they had buy one get one free on pizza and the only thing better than pizza is FREE PIZZA!!

GOT7 Mark Meal (Spicy Vegan Version)


The 'Mark Meal' has been a staple in GOT7 and Ahgase diets for a few years now, with Mark himself being a big fan and making it several times on variety shows. It recently got a new spicy makeover using the infamous spicy chicken noodles which amazingly are completely vegan, so I thought I would call on the help of my little friend 'Chibi Mark' and finally test out this meal for myself, vegan style!


I'm a big fan of the fire noodles so I really enjoyed this and although I'm not a fan of fake meats I did really enjoy the addition of the sausages and cheese is always good! I'll definitely be making it again, quite possibly after GOT7 concerts as I always seem to find myself in a 7Eleven hunting for something to eat after using all my energy up screaming... hehe!

Anyone who is a vegan or vegetarian will have no problem finding food Thailand especially Chiang Mai as it's know for it's wide variety of restaurants serving vegan, vegetarian and organic food, with a lot of the fruits and vegetables being home grown. Meena is a restaurant which has become popular not just because of the colourful, home-cooked, traditional Thai dishes but because of their variety of organic rice which they actually cultivate themselves.

After seeing all the colourful photos on Instagram I just had to go visit there and check out their vegan options. The menu does offer meat dishes in addition to their vegan menu but you can also ask if it's possible to get a vegan version of some meat dishes. The menu also changes depending on what's available each season so even if you visit multiple times they'll still be new things to try. Each dish comes adorned with fresh, organic veggies which are not just for decoration they're really delicious, crisp, fresh and sweet, we literally cleared every plate that we ordered!

The rice is the main attraction though and I know not a lot of people find rice exciting but it's such a staple dish and so good for you to. Meena allows you to customise what rice you want served, they offer several different types and the presentation of them is so beautiful it almost looked too pretty to eat, but not only did we clear our plates, we ordered extra and then bought some rice from their on site shop to take home with us.

Meena also offers some desserts and although I was very full at this point I just had to try their ice cream which was so light and soft and came so cutely presented, I kinda wished I ordered another one of their fruity ice creams but I was about to burst from all the delicious food. The restaurant is in such a beautiful setting to with some small shops outside offering handmade goods, unfortunately they are only open for lunch and it fills up with people quite quickly that some dishes can get sold out, so if you visit come early, I promise you will love it!

Big Buddha - Po Lin Monastery - Lantau Island - Hong Kong

The Big Buddha is probably one of Hong Kong's most famous sights, on my first trip to Hong Kong we unfortunately couldn't visit due to bad weather so I was hoping on this trip I could finally take my mum there to see it and kept a close watch on the weather, the night before there was a storm so we were worried it be another trip we'd miss out seeing it but luckily the weather cleared up in the morning and we were able to take a cable car up there.

The cable care to the summit was a longer ride than I thought but a really enjoyable ride which gives you a great view of Hong Kong from above, some cable cars also have a glass bottom so you can see the view below but we just took a regular car, but when you reach the summit the journey doesn't end there it's still a walk to reach the Buddha through shops and restaurants and a tiring climb up 268 steps to reach the base, I was sweating by the time I reached the top but it was great exercise and totally worth seeing this massive creation up close.

Next door to the Big Buddha is Po Lin Monastery, a temple where the monks live. The atmosphere was very calm and peaceful there in complete contrast to the craziness of Hong Kong city, mostly tourists come visit pay their respects there and buy good luck charms.

I always enjoy visiting temples and shrines as they have a whole different atmosphere and beauty. In the past I've only had the chance to see the city areas of Hong Kong and not much of it's natural beauty so this was a whole new experience for me and it was nice to have a few quiet moments before returning to the hustle and bustle.

Po Lin Monastery also has a vegetarian cafeteria where you can buy all sorts or Chinese foods and desserts, I had already eaten a large breakfast so didn't try the food on offer but I just couldn't say no to trying some desserts, Chinese desserts are one of my absolute favourite things so I picked up a few dumplings to try and I had the best mango mochi of my life, seriously mangoes in Hong Kong always taste really good and this dumpling has fresh ones inside, I was almost tempted to buy a box to bring back to Thailand with me for everyone to try.

After exploring the religious area, we walked back to the cable car station and visited some of the shops to buy souvenirs to bring home for the family. Our first visit to Hong Kong we really wanted to take my grandmother to see the Buddha but unfortunately due to bad weather we couldn't go and now due to ill health she can no longer travel so didn't make this trip with us but we still made sure to pay our respects for her and buy her a good luck charm so she was there with us in spirit.

There's just so much of Hong Kong to see and my time there never seems to be long enough so I'm so happy after all these years we finally got the chance to visit and see The Big Buddha, it was definitely worth the wait and I would love to explore more of the area if I ever get the chance to go back to Hong Kong.

The Elephant Retirement Park - Chiang Mai - Thailand

Elephant Retirement Park

Elephants are one of my favourite creatures and I've been lucky enough to have some amazing experiences with them over the years. Elephants are very beloved in Thailand and there has been a big movement to help conserve them and end zoos which force them to beg and perform. I have definitely noticed over the recent year how there are a lot less elephants on the city streets and how the attitude towards animals has changed, a lot more people are aware of animal cruelty and less people are supporting this exploitative practice and just want elephants to live our their natural lives in the jungle, which is how it should be. That being said sadly there still are a lot of places where it is common practice to ride and see elephants perform and while I understand tourist come to Thailand to see elephants I ask that you please consider of the lives of these elephants, do a little research and only visit the places that support and conserve these beautiful creatures.

The Elephant Retirement Park is one of these places which does not offer any rides or force the elephants to do tricks or beg for treats, instead gives them a place where they can be free from chains and hard labour and enjoy their lives in harmony with the humans who take care of them by simply treating them with the kindness and compassion they deserve.

One of the major driving forces for my to return to Thailand and learn my native language was so I could help rescue, rehabilitate and educate people on animal welfare and how these animals should be respected. I try to highlight the smaller charities as much as I can as I know how much they need the recognition and support. The Elephant Retirement Park is funded entirely on donations, they don't ask much from you either and a day spent learning about and being next to these beautiful creatures is less than $80 which is such a small cost especially when you think of how much food alone is needed for these animals to live on. The price of a day with the elephants also includes transport to the park from Chiang Mai and a delicious so they really aren't making a lot of money and need as much support as we can give them so they can build a better environment and rescue more elephants from the tourist and agriculture trade.

Being this close to these beautiful creatures really is just a life changing experience, they're just so loving and gentle. It's not my first time being this close to them, I've been to zoos, I've seen them perform and sadly I've rode on them to but this is the first time being this close to them since I made a real conscious effort to never again support any cruelty against any creature and the atmosphere was completely different. I really felt the love and respect, seeing the elephants free to run about and play in the mud and just be themselves, there were no picks axes, no shouting, no stress, there was just an aura of awe and genuine happiness.

There are so many charities in Thailand dedicating their lives to preserving the world's creatures and giving them a better life and they need all our support, I had an absolutely magical day and it really warmed my heart. So if you do visit Thailand please be conscious of the places you visit and how they treat their animals and make more of an effort to support the charities that want to give these creatures a better life.

Insadong is the place to go to if you're looking to experience the more traditional side of Seoul. While there are a plethora of traditional restaurants, tea houses and stores selling all sorts of handicrafts and souvenirs on the main street the most interesting places can be found down the small back alleys, one of these places being the beautifully named tea house, Moon Bird Does Think of Only The Moon.

I say this every time but I really can't stress enough how you must visit a traditional tea house when in Korea, the cosy atmosphere, the smell of brewing herbs and graffiti covered walls are something you can only experience in Korea. I could seriously spend the whole day just relaxing in a tea house. It was a bitterly cold winter's day when we visited this tea house and what was really lovely was that they had already put out blankets and hot water bottles for the customers to warm themselves up with, I could have fallen asleep right then and there it was so wonderful and cosy.

Yujacha tea is one of my favourites and I always make sure to order it when I'm in Korea (as well as bring a jar or two home of it) and the sweet warm citrus flavour is the perfect thing to warm you up on a cold day. We also ordered some deep fried mochi which came covered in icing sugar and a sweet and chilli sauce on the side to dip them in and the also gave us some traditional rice cakes as an extra treat, one of my favourite things about Korea is how they always give you extra treats as service.

Whilst enjoying our hot drinks we took in the atmosphere, reading all the little love notes left by past customers some of which came from far away countries and some left by guest who visited almost a decade past, of course we made sure to leave our mark to and I hope one day we can go back there and find those little memoirs we left of our amazing trip to Seoul.

Cereal is one of my favourite foods, I think every time I buy a box I end up eating the whole thing in one go so when I found out that there was a cereal cafe in Seoul I just had to check it out. Midnight is Seoul has been on my radar for a while, I actually wanted to visit it on my last trip to Seoul but it was closed so this time I made sure to stop by and check out that awesome pink aesthetic.

Midnight in Seoul now sell their own branded cereal which you can find in some Olive Young stores and their packaging is so on point, I love the cartoon movie theme and the bright colours they use, they've definitely created their own unique brand, the place was just so beautifully decked out and so on point. They also have a merch store next door where you can buy not only the cereal but clothes, phone cases, pins and much more featuring their kawaii movie characters.

So let's get onto the food, you can either tailor make your cereal bowl exactly how you want it or order one of their sets which is what I did because although the ice cream was tempting I really needed some fruit! They also have a selection of different milks you can choose from so if you're vegan don't worry there are plenty of options for you to try and they will make stuff exactly to your liking. If cereal isn't your thing then they also have a few other breakfast items on the menu you can chose from and of course all the coffee because Korea is all about the coffee.

If you're curious Midnight is Seoul also has a KPop connection to as Jo Kwon from 2am actually owns this place and if you check out his instagram you'll see he's there quite often so if you're lucky you might be able to see him and his cute doggies there. I honestly loved this place so much and I'm kinda kicking myself I only decided to visit on my last day as it was only a short walk from our apartment, also I feel like you can't go wrong with cereal but then again I am a cereal addict! I adored the aesthetics and the cartoon, movie theme so much, I think it's very me and I kinda just wanted to move in there but one thing for sure I will definitely go back there on my next trip to Seoul!
