Things that make you go Oooooo (June 2011)

June has been an absolutely amazing month for me I had so many fun times in the US and although I'm a little sad to be back I've got a very exciting month ahead of me and with summer well on its way and the brighter days it's hard not to wake up with a smile everyday, so here are a few more things to make you smile this month.

Daily Outfit: Mini Minnie


Disneyland is quite possibly one of my favourite places on this planet, I never quite grew out of my Disney obsession as a child and if anything I think I'm more in love with Disney now than I was when I was a kid. My first visit to Disneyland in California was in 2009 so and of course when the opportunity came for me to visit there again I took it and dressed for the occasion!


I've always loved Minnie Mouse she's my original fashion inspiration with her big bows and poofy dresses she never fails to look completely adorable so clad in my Minnie inspired outfit I was on a mission to meet Miss Mouse herself

The Frequent Flyer: Chillin' at the Chamberlain


After 3 weeks of hard work, dirt and living in a mice infested trailer (I ain't kidding!) I thought it was about time I relax and treat myself to some luxury LA living for a few days so checked into a gorgeous West Hollywood hotel called The Chamberlain.


The Chamberlain has to be one of the nicest hotels I've ever stayed in and it didn't take me long to feel right at home. The rooms are gorgeous each have their own balcony, seating area, huge comfy bed, fireplace and well stocked fridge with snacks!

There's also a gorgeous rooftop pool with some stunning views of LA especially at night, a restaurant which makes some delicious food which you can of course order up to your room if you want to spend the day in bed, a 24hr gym and it's in a great location just a few blocks away from Sunset Boulevard, Hollywood, The Farmers Market, LACMA and Melrose Avenue which is the best place to shop!


The staff there are amazing so warm and friendly and super helpful, I honestly did not want to leave and would have happily spent another few weeks there given the chance but if I'm ever in the neighbourhood again I know exactly where I'll be staying!

Courgette & Parsnip Spaghetti with Garlic Mushrooms & Tomatoes


This is something I created one night when I had a craving for spaghetti but alas had none in the cupboards. A lot of the recipes I create seem to come out of having a lack of ingredients in the house which just shows you don't need to have a well-stocked cupboard to create something healthy and delicious.
  • Courgette
  • Parsnip
  • Garlic
  • Fresh Basil
  • Cherry Tomatoes
  • Mushrooms
  • Olive Oil
  • Salt & Pepper

 Place a frying pan and a saucepan of water on a high heat to heat up/boil.

 Slice the tomatoes and mushrooms and finely dice the garlic.

 Using a peeler peel the parsnip and courgette into thin strips.

 Add the strips or parsnip and courgette to the boiled water to cook for a few minutes until slightly soft, you don't have to boil these you can also eat them raw but I chose to blanch mine just to give them a slightly softer texture.

 Add  a tablespoon of olive oil to the frying pan, the diced garlic, tomatoes and mushrooms and cook for a few minutes until the vegetables have softened, once cooked add in a few leaves of basil and season with salt and pepper.

 Serve and enjoy!

Daily Outfit: LA Runaway


Hello from LA, sooo if you're reading this you must have guessed by now things did not go as expected during my time at the Gibbon Center and I ended up quitting and leaving early so have spent the last few days slumming it in a hotel Downtown LA.


LA has been just the pick me up I needed and I'm thankfully enjoying my last week here in California. I'm currently writing this from my beautiful hotel of pure luxury in West Hollywood and on Monday I'll be venturing off to the even crazier city of Las Vegas so they'll be lots of fun times ahead for me.

If you're going to runaway it's always best to do it in style!
